It'll try to come back, and it wrecks your mower
Plenty of species will send up suckers from a live stump and root system — you cut down one tree and get a cluster of shoots you have to keep fighting. And a stump hidden in the lawn is the thing that catches a mower blade or a toe. Grinding ends both.
Grinding takes the stump several inches below grade and turns it into chips, so you can fill it with soil and grow grass right over it. The spot just disappears.
